Watermelon Sorbet

On these crazy 100 degree days we have been having, nothing is more refreshing than a fresh fruit sorbet. And what says summer more that a red juicy watermelon?! Um….nothing….yum! The best part is that this is so easy it’s ridiculous.

  • about 5 cups of chopped watermelon
  • the juice of one lemon
  • optional sweetener, I used 3 droppers of liquid stevia.

You will need a decent blender and an ice cream maker.

This watermelon was entirely too big. I have never made this before so I was kind of flying by the seat of my pants here. I started by chopping half this melon into chunks. Half this melon yielded this much:

It was too much! I ended up using about 2/3rds of this. I stuffed my Vitamix with as much watermelon as I could. My best guess is about 5 cups. I added the juice of one lemon. Then I blended this up for about a minute. I tasted it, then realized that while I thought it was just perfect my kids would want it a bit sweeter. I did not want to use sugar, honey wouldn’t dissolve properly unless I heated it so I used some liquid stevia. For the amount of watermelon puree I had I used 3 droppers of it.

I spooned the foamy stuff off the top and added the liquid puree to the ice cream maker. I let the ice cream maker do its thing for about 20 minutes, and Voila! Delicious, refreshing watermelon sorbet.Yummy!!

What about Agave as a sweetner? Its not as thick as honey and way better than stavia. Would you think it would blend?

I don’t really make Agave. It is high in fructose and actually far more processed than most of us are lead to believe. If you want a thinner syrup like consistency try coconut syrup instead. Give it a shot and let me now what you think.
