I know this might sound silly but there really is a right way to cook a hard boiled egg. Being a busy Paleo mom on the go. I eat a lot of hard boiled eggs for breakfast, lunch and snacks. I cook them a head of time and keep them in the fridge for easy snacks or for a quick breakfast. For years I just  put them in a pot, added water until they were covered then put them on the stove on medium or medium low heat for 20 minutes or so. (or until I remembered that I left them on the stove and hopefully pulled them off before the water completely evaporated) What I didn’t realize is that I was over cooking them! You mean hardboiled egg yolks don’t have to taste chalky and gag you on the way down? Get outta town! It’s true! Here’s the trick. Place your eggs in a pot that will fit however many eggs you are trying to cook. Fill the pot with enough cold water to cover all of them. Place on the stove and turn your burner to medium heat. Here’s where I was going all wrong….. Once the water is boiling. Cover the pot and turn the heat off! That’s right turn it off! The covered pot will remain just hot enough to GENTLY cook those beautiful little eggs to perfection in 17 minutes. SET THE TIMER because 17 minutes is perfect. Then you get these beautifully set yolks just cooked through without that greyish ring that I sometimes got when I left them on for too long or cooked them over high that was too high. If you like your yolks softer you can do 12 minutes for a medium boiled egg.

Now being Paleo I only have Pastured Eggs in my house. I get them from a local CSA near me that brings pastured and grass fed meat and dairy from the farms in Illinois to a pick up location closer to my house.  Look at the natural bright yellow color in these yolks! Sometimes the yolks are actually orange! The nutritional benefits of pastured eggs is far superior to conventional eggs.

Relative to Conventional eggs, Pastured eggs have:

  •  5 times more vitamin D
  • 2/3 more vitamin
  • 2 times more Omega 3 fatty acids
  • 3 times more vitamin E
  • 7 times more beta carotene

If I was going to rank eggs from best to worst it would go like this.

  1. Pastured – raised and fed on land that grows vegetation. This is their natural diet, grass, and bugs basically
  2. Certified Organic-  these chicken are fed an organic vegetarian feed, they are antibiotic and hormone free and usually free-range.
  3. Free Range or Cage Free- honestly, this can be hit or miss. Legally all it  means is the chickens have “access to the outdoors”, and not housed in industrialized egg laying contraptions.  There are no real regulations as to how long they are outside or if they even wonder outside, just are just required to have access.  The type of land or what they are fed are not regulated and may still be given antibiotics and hormones, so check the label.
  4. Natural – I see this sometimes but there is no real guideline, read the carton.
  5. Conventional

I love eggs, the better the source the better the egg! If you’re gonna eat’em might as well cook’em right! Enjoy those incredible, edible eggs!

    May I ask how do you store the eggs after cooking? And how long are they good for? I like to make a big batch to save time making eggs in the morning. Thanks!

      Hi Jess,

      I just store them in the refrigerator. I will boil them on a Sunday and they will last all week! They will probably last longer but I usually go through them pretty quickly.
