Treats for the kids. Ok, and for Mom too. I love pecan sandies and I found this recipe on one of my favorite recipe sites www.comfybelly.com. Check ’em out!

Ingredients:

  • 2 cups of almond flour
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda
  • 1/2-3/4 cup rough chopped pecans
  • 4 tbs coconut oil or butter melted
  • 1/4 honey (raw is peferred)
  • 2 tsp vanilla
  • garnish: sprinkle of sea salt.

Preheat oven to 300.

Mix almond flour, salt, baking soda, and pecans in a mixing bowl. In a smaller bowl mix melted coconut oil or butter, honey and vanilla together then add to the almond flour mixture.  The dough will look like this.

I used a regular teaspoon  to drop the dough onto a parchment paper lined cookie sheet just like you would drop chocolate chip cookie dough. Sprinkle the tops of the uncooked cookie dough with a bit of sea salt.

Bake at 300 for 20 minutes or until lightly browned. YUM!!

    I have all the ingredients, but I’m going to back off the honey…well maybe a couple of tablespoons–everything taste sweet when you don’t eat a lot of sweet things.

    There are 11 lumps in the oven on parchment paper…one didn’t make it into the oven ! I split the butter and coconut oil 1/2 and 1/2. (the butter was fresh made today in the food processor) and I licked clean every spoon that I used-especially the butter and coconut oil. Another 10 mintues and they’ll be ready.
