This one is for all my busy mom friends out there. The biggest challenge is finding a healthy home cooked meal you can make in under 20 minutes. That is the best part about fish! Not only is it yummy, it cooks up in no time! I started this one at 5:27pm and it was ready by 5:42pm!

Ingredients:

  • 4 6/8oz Halibut Filets
  • 2-3 tbs butter (pastured or raw preferred)
  • 3-4 tbs olive oil
  • enough fresh green beans to feed 4
  • 2 cloves fresh garlic or equivalent garlic powder
  • salt and pepper to taste
  • Slivered almonds (optional)
  • Sliced lemon (optional) 

Heat 2 large saute pans on medium high heat. Melt the butter in and 1 tbs olive oil in one pan for the fish  and 2 tbs olive oil in the other for the green beans. Save the last tbs of olive oil and butter in case your green beans or fish need more.

Add your green beans to the pan and season with salt and pepper, give the green beans a 2 or 3 minute head start. At about the 2 minute mark, add the garlic mix/toss, turn the heat down to medium and cover with a lid.

Salt and pepper both sides of the halibut filets and add them to the hot pan with the yummy melted butter. You want to cook the fish 3-4 minutes per side depending on the thickness of the fish. You want both sides to have a kind of brown crunch to it. I like my halibut the way I like my salmon, medium, not well done all the way through but a nice sear on the outside. Keeps it moist and juicy!

After you have turned the fish once, check your green beans, toss/mix and taste for desired doneness. I like mine still a bit crisp. If done the way you like turn off the heat. If they need more time leave the heat on and re-cover while the fish have the remaining few minutes.

Once the fish is done turn off the heat and leave in the pan just until you can sprinkle the green beans with slivered almonds if using. Taste for seasoning. More pepper? More salt?  Always taste before adding more!

Serve fish with a spoonful of the brown butter juices left in the pan and a piece of lemon and the green beans! Voila! Dinner is served!
