Who doesn’t like mashed potatoes?! They taste delicious but full of glucose, insulin producing carbs and no nutritional value to speak of. Bummer! This has become my favorite substitute! It’s super easy and only 4 ingredients!

Ingredients:

  •  a head of Cauliflower (preferably organic) This makes a lot so half the recipe if you are only feeding a few.
  • lots of butter (grass-fed preferred)
  • sea salt
  • pepper

Bring a large pot of water to boil over high heat. Once water boils, add the cauliflower and reduce heat a bit. Let cook about 15-20 minutes until cauliflower is fork tender.

Drain the cauliflower in a colander and transfer to a food processor or powerful blender. Add a few tbls of butter. Process the cauliflower and butter together until you get that whipped “mashed potato” consistency.

You can also very easily just do this with a potato masher if you want a chunkier texture. Season the buttery cauliflower mixture with salt and pepper.  You can always add more butter too!

I served this with grilled top butt steak, sautéed mushrooms and onions and grilled fresh asparagus. YUM!! This is really as close to mashed potatoes I can get and it has become my go to side dish for all sorts of things like short ribs, meat loaf, roasted chicken or turkey……use your imagination!!

    I have to admit, I really liked the cauliflower “mashed potatoes.” I had 3 helpings of them.
