Paleo Cole Slaw

Nothing says BBQ like cole slaw. I love cole slaw. The problem is the store bought stuff is made with all sorts of crap I don’t want put into my body. Namely soybean oil and high fructose corn syrup. This is my go-to, super easy recipe that wins rave review every time. The best part is, once you make the Paleo Mayo (which I try to make and keep on hand) this is super quick.

Ingredients:

  • A bag of shredded cole slaw mix (or about a half a small head of cabbage, green or purple shredded and a couple handfuls of shredded carrots)
  • About a cup of Paleo Mayo, click here for the recipe.
  • About 2-3 tbs of apple cider vinegar
  • About 2-3 tbs raw honey
  • About 2 tsp celery salt or celery seed (ground or un-ground depending on your preference)
  • fresh ground pepper and salt to taste.

That’s it! I put “about” in front of the dressing ingredients because some people like a lot of dressing, some like less. Some people like a tangy cole slaw while others like it more sweet. I start with the measurements above then adjust accordingly. Basically I taste it as I go!

Put your shredded cabbage and carrots in a large mixing bowl. In a separate smaller mixing bowl mix together the remaining ingredients. Taste it and adjust your tang (vinegar) to sweet (honey) ratio to your liking. Add the dressing to the cabbage and carrot mix. Stir, taste and adjust your seasoning. I like a lot of pepper so I tend to add a little more pepper. I also often wait to add extra salt until right before the end.

Voila! Paleo Cole Slaw. Enjoy!
