Cobb Salad! Yum!

The fantastically delicious Cobb Salad is usually one of my go to choices at restaurants since it is usually pretty easy to Paleofy. Here is my recipe for making it at home. Super easy and super delicious!

 

Ingredients: (per salad)

  • A few handfuls of the lettuce of your choice. (Organic is preferred for all ingredients where possible, I used Baby spinach and baby kale but romaine is more traditional)
  • 1/4 cup shredded carrots (or chopped, what ever floats your boat)
  • 1 0r 2 green onions ( you can use any onion, my kids don’t like strong onions but will eat green onions.)
  • 5-6 grape tomatoes sliced in half or quartered (or go crazy and leave them whole or chop up a larger tomato)
  • 1/3 to 1/2 cup chopped cooked chicken ( feel free to tear, pull, grill, boil, use breast meat or other pieces, again, whatever floats your boat)
  • 2-3 slices cooked bacon chopped
  • 1 hard boiled egg chopped
  • 1/8 cup slivered almonds ( or chopped nuts or seeds of your choice)
  • 1/2 avocado cut into cubes
  • 2-3 tbs extra virgin olive oil
  • 1-2 tbs balsamic vinegar
  • a few sprinkles of oregano or basil or both
  • a few shakes of granulated garlic
  • salt and pepper to taste.

Now if you have no real concern for presentation just throw the ingredients in big ass salad bowl; toss and eat. Or…..

Add your lettuce, carrots, green onions and tomatoes to the bottom of the big ass salad bowl.

Then portion into separate little sections on top of your lettuce mix around the bowl the chicken, bacon, egg, almonds and avocado until it looks like the above picture. (Hopefully yours will be neater than mine!)

In a smaller bowl whisk together the oil, vinegar, oregano and/or basil,garlic, salt and pepper. Check for taste. Some people like more vinegar, others more oil. I like a 2:1 ratio of oil to vinegar when using balsamic.  Some like lots of garlic (like me!) others like less or none. Once it is too your liking drizzle it all over that beautiful, bodacious, fantabulous Cobb salad. This is the dressing I use for all my salads by the way. Bottled salad dressing sucks!!

Now toss it up! Make a big mess and enjoy!! Delish!
