I found this recipe thru Just Eat Real Food on Facebook. If you haven’t liked that page yet, DO IT NOW! Lots of yummy Paleo ideas! Or Click here for the blog address. I believe these were originally found on Raias’s recipes. These came out absolutely delicious except Mia and I decided they look like drops of poop. So from now on we are affectionately calling them Paleo Poop. ย Here the recipe as I made them.

What’s in them:

  • 3 tbs coconut oil
  • 1/3 cup honey
  • 1/2 cup almond butter or your favorite nut butter
  • 1 tsp vanilla
  • 2 cups shredded coconut
  • 1/4 cup high quality cocoa powder
  • 1/2 cup dark chocolate chips-(I like enjoy life brand, no soy, no dairy, no allergens.)
  • 1/4 cup pecans (recipe calls for walnut but I didn’t have any)

Start by adding the coconut oil, honey and nut butter in a medium sauce pan over medium heat and stir as it heats up and is well blended. Next add the vanilla and the cocoa powder.

Once that is all well blended and liquid-y, add in the shredded coconut and mix well. Last add in the nuts and chocolate chips.

What you will have a mess that looks like this.

Let cool long enough to easily handle, It will be soft and won’t stick together at first. Drop teaspoons full on to a cookie sheet, like this.

See? they kinda looks like little piles of poop. They of course smell and taste delicious! Chill in the freezer for about 10 minutes until they harden up and stick together. Store in an airtight container. I have been keeping mine in the refrigerator so they stay crunchy.

Mia loves them, well….we all love them. We decided they taste like a cross between Nutbutter cups and almond joy.

Mia would be smiling but her mouth is full! ๐Ÿ˜‰
