Arugula Pear Salad

Arugula….yum! I love the crisp peppery taste that compliments just about everything. This is so quick and easy I feel almost guilty calling it a recipe.

Ingredients: Amounts depend in how many people are eating it and if it is a side dish or a meal. I made mine as a side dish to grilled skirt steak for 3 people

For the salad:

  • A few handfuls of arugula or baby arugula
  • 1 small pear in sliced into julienne slices
  • A handful of grape tomatoes, (I sliced mine in half)
  • A few VERY thinly sliced rounds of sweet or vidalia onion.
  • Optional: Shaved Parmesan or goat cheese if you are a dairy eater
  • Optional: if this is a meal I would add some sort of protein, maybe shrimp, chicken or steak


  • 2-3 tbs of extra virgin olive oil
  • The juice of half a lemon
  • sea salt to taste
  • pepper to taste

Place all of your salad ingredients in a large bowl. I usually just pour the olive oil, and squeeze the lemon right on the salad. Then I grind the salt and pepper directly on the salad and toss. Taste to make sure the salt and pepper are to your liking. If you are adding protein to make it a meal go ahead and add it now.   Voila a bowl of fresh deliciousness!
